Celtic Seasalt - Fleur de sel 125 g
"Flower of salt" or Fleur de sel by Mattisson is a Celtic sea salt harvested by hand from tidal pools along the coast of France, in one of the purest places on earth – Brittany. Due to the labor-intensive collection process, Fleur de sel is the most elite and expensive salt in the world. It crystallizes on the surface of seawater, and its delicate crystals are collected by hand without the use of metal tools, only during a short period of the year. For every 40 kilograms of Celtic gray salt, only one or two kilograms of Fleur de sel are harvested, which has a completely different crystalline structure than other salts. Ancient Romans did not consume the salt known today as Fleur de sel; instead, they used it as a medicine, adding it to ointments and tinctures.
Chemical Composition
The delicate salty flakes of Fleur de sel are not industrially processed and contain a richer content of minerals and trace elements. Fleur de sel retains moisture just like coarse Celtic salt. Its moisture content is around 10%, compared to the standard 0.5% in table salt. It contains sodium chloride, calcium, potassium, magnesium, and iron. The unique flavor is due to high concentrations of iron, magnesium, and sodium chloride.
Application
Fleur de sel is a natural salt created by the sea, sun, and wind. It is a true, unrefined salt delicacy with no additional processing. After natural evaporation, aided by the sun's rays and the wind, a layer as thin as dew forms with fine, fluffy, snowflake-like crystals that melt in the mouth. This unusual salt is highly valued and often used as a finishing touch for various types of food. Regarding its effect on human health, this salt is rich in minerals. With its unusual taste and texture, Fleur de sel is highly regarded in culinary arts. It is so delicate that it is nearly impossible to truly salt food with it. At the same time, it enhances and prolongs the sweet flavors of desserts. It is not subjected to thermal processing and is added to food just before serving. Due to its high moisture content, the salt dissolves slowly in the mouth, retaining the flavor for a longer time. Fleur de sel is suitable for both warm and cold dishes of meat, seafood, fish, and vegetables. It also pairs wonderfully with desserts, as its fine sea flavor enhances the taste characteristics of ice creams, pastries, creams, dark chocolate, and fruits.
